La '''gâche''' est une spécialité pâtissière vendéenne, qu'on retrouve également dans la [[Maine-et-Loire|région angevine]] des [[Mauges]]. Son origine remonterait au Moyen Âge, chaque famille fabriquant sa gâche à l'occasion des fêtes, notamment celle de Pâques.<br />

Ingrédients de la recette de la gâche :<br />
* 550 grammes de farine blanche,<br />
* 125 millilitre de lait,<br />
* 2 cuillères à soupe de crème fraîche,<br />
* 2 œufs,<br />
* 1 cuillère à café de sel,<br />
* 110 grammes de sucre,<br />
* 110 grammes de beurre,<br />
* 1 cuillère à soupe de fleur d'oranger,<br />
* 1 cuillère à café de vanille liquide,<br />
* 1 sachet de levure de boulangerie.<br />

== Recette ==<br />
Les différentes étapes de la recette de la gâche : <br />
* Préparer tous les ingrédients qui doivent être à température ambiante dans un saladier, mettre le lait, les œufs, la crème, le sel puis la farine et la levure. Malaxer pour bien amalgamer puis commencer à pétrir ; la pâte est friable, c'est normal.<br />
* Ajouter le sucre puis le beurre en petits morceaux et pétrir jusqu'à ce que la pâte se décolle des parois.<br />
* Ajouter les arômes et continuer de pétrir 5 minutes. Le pâton doit être lisse et non collant. Transvaser dans un saladier, filmer et laisser reposer 4 heures à température ambiante.<br />
* Verser la pâte sur un plan de travail fariné et la diviser en 3 morceaux de 330 grammes. Façonner chaque morceaux en bâtards. Les déposer sur une plaque de cuisson recouverte de papier sulfurisé. Laisser lever encore 2 heures.<br />
* Dorer les gâches avec un jaune d'œuf battu avec un peu de sucre, inciser sur la longueur et enfourner au four préchauffé à 180 °C pendant 20 minutes en recouvrant d'une feuille d'aluminium à mi-cuisson.<br />
